			<content:encoded><![CDATA[<p>I can&#8217;t believe how much I have been cooking lately and coming up with something even! This time, once again &#8211; was Brent&#8217;s idea to make something. He wanted spaghetti but not spaghetti. He wanted my <a href="http://thegreerfive.com/2009/11/16/spaghetti-sauce/" target="_blank">kicked up spaghetti sauce,</a> pasta, Italian sausage and cheese. So what did I make and how?</p>

<p>Ingredients:</p>
<p><a href="http://thegreerfive.com/2009/11/16/spaghetti-sauce/" target="_blank">Some of my kicked up Spaghetti Sauce</a></p>
<p>Small pkg of Italian Sausage</p>
<p>1lb Hamburger Meat</p>
<p>About 12-16oz of bow-tie pasta</p>
<p>Mozzarella Cheese</p>
<p>Parmesan Cheese</p>
<p>Olive Oil</p>
<p>How To:</p>
<p>Grab a 13&#215;9 glass dish. After sauce, meat and pasta is cooked, drizzle pan with olive oil. Add pasta. Add meat. Add sauce. Cover with shredded mozzarella and then cover that with Parmesan to give it some &#8220;crunch&#8221;.  Bake in the oven on 350 for about 20 mins and voila you&#8217;ve got Brent&#8217;s Pasta Creation. I served it with <a href="http://www.marzetti.com/products/new_york/detail.php?bc=18&amp;cid=58&amp;pid=1137" target="_blank">New York Brand Ciabatta Rolls!</a> Yum Yum!</p>

			<content:encoded><![CDATA[<p>Brent and I love all things spicy and we have both been talking about me finally making a go at creating our own little salsa or dip. I have done it before but nothing really worth tasting and never tried again. Finally I went and got all the produce I need yesterday to create my marvelous salsa.</p>
<p>Here&#8217;s the thing though, I made it TOO SPICY. Way too spicy. But it does taste phenomenal and you can alter it any way that you would like.</p>
<p>Ingredients:</p>
<p>1 Poblano Pepper</p>
<p>2 Jalapeno Peppers</p>
<p>3 Habanero Peppers</p>
<p>1 Small Red Onion</p>
<p>8 Roma Tomatoes</p>
<p>1 Cup Shredded Cilantro</p>
<p>1 Lime</p>
<p>Instructions:</p>
<p>Cube the Roma Tomatoes. I don&#8217;t keep the &#8220;guts&#8221;  (seeds etc on the inside) just the rest. Dice up the onion, dice up the peppers (DO NOT TOUCH YOUR FACE AFTER CUTTING PEPPERS. Make sure to wash your hands). Shred the cilantro the best you can to find pieces. I had the kids tear off the leaves from the stems of the cilantro and then I just cut, cut and cut. Mix all together in a bowl. Cut the lime in half and squeeze the juice from the lime into the salsa. Voila. Spice Spring Salsa.I did add salt and pepper to it afterward and chilled in the refrigerator.</p>

			<content:encoded><![CDATA[<p>Meatloaf is a quick and easy recipe / meal for me to make around here and the kids actually eat it. I usually serve it with Baked Potatoes and a Vegetable of some sorts. Brent is not the biggest fan of Meatloaf &#8211; no he is a pretty picky eater &#8211; but he will eat this. So here is the Recipe for The Greer&#8217;s Meatloaf.</p>

<p>Ingredients:</p>
<p>1-2lbs of  Ground Hamburger Meat (Or Turkey Meat If You Please)</p>
<p>1/3 Cup of Ketchup</p>
<p>3 tbsp of Sour Cream</p>
<p>2 Eggs</p>
<p>1 to 1 1/2 Cups of Ground Cornflakes</p>
<p>3 tbsp of Tomato Paste</p>
<p>1 tbsp of Lipton Onion Soup Mix</p>
<p>Directions:</p>
<p>Preheat Oven to 400 degrees. Mix Everything besides Cornflakes and Meat &#8211; stir up very well. Grind up the cornflakes and mix them into the meat. Add the mixture to the meat and put into a bread loaf pan and put into the oven. Sometimes I lightly grease the bread loaf pan but not often. Add salt and pepper and cook for about 45 mins to an hour. You can always check the meat to make sure it is no longer pink inside in the middle while cooking and it won&#8217;t dry out. I don&#8217;t add ketchup to the top of the mixture like most. Do. Serve and enjoy!</p>
